- Marinated Hokkaido scallop and cauliflower rice, served with coulis of celeriac and snow urui (edible wild plant).

- Fluffy chiffon cake with Hungarian foie gras mousse and bacon in it, served with rosemary flavor and déclinaison of hyuganatsu (citrus fruit).

- Poêlé of lightly smoked cod from Aomori Prefecture, with steamed soft roe and grated small turnip.

- French duck leg ballottine, white navy bean and pig's trotters cassoulet.
